Cornish ‘Line Caught’ Brill

Brill is a large member of the sole family, with a flavour and quality similar to turbot, but less well-known and, in our opinion, vastly underestimated. Top chefs and fish connoisseurs love it for its firm, meaty texture, white flesh, and distinct, rich, sweet flavour. We guarantee a revelation if you haven’t tried it before.

Brill Information

Brill is similar to turbot and cheaper. It has an almost oval body, a grey brown dark side with light and dark freckles (but no tubercles) and ranges from 400g – 4 kg. Like turbot, skin colour varies according to where the fish is caught – lighter brill are found on sandy sea beds, with dark, rich colours found on muddier beds. Brill has sweeter flavour than turbot. Smaller turbot and brill under 500g are appreciated on the bone, will larger fish over 3kg yield great steaks.

Fillets are best cooked simply – pan-fried with oil and butter, oven-roasted, grilled or gently poached in stock. Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
