Farmed Fresh Halibut

Halibut is the largest flatfish in the sea, growing up to 300kg and 4m in length. It’s highly regarded for its lean, meaty texture, huge flakes, and creamy white flesh that maintains flavour well. Its mild, sweet, and somewhat buttery flavour appeals to both chefs and home cooks. It’s also a healthy choice because it’s high in nutrients and low in fat.

Halibut Information

The largest of the flatfish, halibut have been known to grown as large as 300 kg and 4 m long in deep waters. This is a highly esteemed and very tasty fish, with creamy white, firm, meaty flesh. It has a compressed oval body with large mouth. The dark eye side is a greenish dark brown and the blind side is pure white. Smaller fish range from 1-3 kg are known as ‘baby’ halibut, and usually found in shallower water. The best quality fish are largest 3 – 40 kg fish usually line caught, so the catch is limited, making them a more expensive fish.

The best method to prepare halibut is to keep it simple. Halibut has firm, white meat that can dry out fast when cooked, so pan fry in melted butter and olive oil or choose a method that uses a lot of liquid, such as poaching in water, stock, or milk.

Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
