Cornish Megrim Sole
Megrim Sole is also known as Cornish Soles, as the majority of Megrim Sole is landed in Newlyn. Mainly loved by the Spanish, and less know in Britain. Chefs who are discovering Megrim have begun to display this wonderful fish on their menus, and it is slowly becoming recognised in many eateries.

Megrim Sole Information
Also known as whiff, it is more appreciated by the Spanish rather than the UK. It has an oval body similar to lemon sole with a sandy brown dark side, but is from the same family as Turbot and Brill. It has a softer flesh and a thin skin which can be readily crisped.
Seasonality: Apr – Feb
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.

The clear waters of the Cornish coast are home to Britain’s finest seafood and shellfish. The daily catch from local day boats lands fresh Cornish crab and lobster, magnificent line-caught sea bass in season, mackerel, pollack, sole and place. Wonderful Cornish native oysters, mussels and hand dived king scallops. But with over 40 local species, from Cornish Sole to Sardines, the truth is we never know what the tide will bring in.
