Fresh Turbot

Turbot, the undisputed king of the oceans, is a fine-dining delicacy found on the menus of the world’s greatest restaurants. Its firm, white, luscious flesh offers a delightful, deep flavour that is similar to that of Dover sole. It’s a chef’s delight to work with: it’s delicious when cooked simply, but it can also withstand flavours that might overpower a more delicate fish.

Turbot Information

Like Halibut, Turbot is a highly prized species, often regarded as the best of the flatfish with great flavour, firm and white flesh. It has an almost circular outline, studded with bony tubercles on its darks side. Colour varies from light to dark brown, spotted with green or black and white blind side. Turbot ranges from 400g to 10kg. The texture is similar to Halibut, but it has a slightly more pronounced ‘fishy’ taste, so requires little to enhance the flavour. It is also a chefs dream, retaining plenty of moisture during cooking, which means it doesn’t dry out easily.

Fillets are best cooked simply – pan-fried with oil and butter, oven-roasted, grilled or gently poached in stock. Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
