Cornish ‘Line Caught’ Coley
Coley is a low-cost cod family fish that can be substituted for cod or haddock in a variety of meals. Coley’s skin is coal coloured, with a thick white line running horizontally down its body; its belly is pale silver. The flesh of fresh fillets is pink-grey, but when cooked, it becomes paler and flakier. Coley is wonderful when eaten fresh. It’s also referred to as saithe or coalfish.
Coley reside in rocky regions near the coast and are frequently captured off the Cornish coast. Coley is an important member of a family of fish that includes Haddock, Cod, Whiting, Ling, and Hake. We are happy to be able to provide line fished excellent cod to chefs throughout the hotel industry; our locally sourced fish is landed daily.

Also known as saithe, Coley has a long tapered body, with a slight blue tint. Specimens range from 500g to 6 kg and usually suited for filleting only. This fish can be a very good value for money option. The flesh is often dull, off-white colour when raw but lightens during cooking. It is common in the northern parts of the Northern Atlantic including the British Waters and the Bay of Biscay and can be found close to the shore, particularly in rocky areas, but larger examples tend to be found around off-shore wrecks and reefs.
Many of our boats use handlines and rods to catch our wild Coley. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.
Seasonality: All Year
Fillets require either skinning or scaling if the skin is left on and pin-boning before or after cooking. It is an excellent, inexpensive fish that can be used for deep-frying in batter or breadcrumbs or poached for use in fish pies. Coley is also excellent in fish casseroles and soups.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
