Cornish Sustainable Cuttlefish

Stunning Cuttlefish landed directly on the coast of Cornwall from small day boat trawls and is mostly available all through January to February and April to December. Cuttlefish are particularly popular and is the hero of the dish in many countries such as Spain, Italy and Portugal. In recent year’s the UK restaurant market have explored creating dishes with Cuttlefish, making this fabulous seafood more widely known, and it is growing slowly in popularity especially in Cornwall. 

Cuttlefish, a relative of squid and octopus, has a light, sweet, and delicate flavour. It’s a good-value seafood that’s also simple to prepare.

They feature a big head with a bone-like structure and are usually available in sizes ranging from 225g to 500g. Cuttlefish can be used in braised meals or added to pasta. Their ink is frequently used to colour black spaghetti.
