High-Quality Gilt Head Bream From Cornwall

The gilt head, which gets its name from the golden band between its eyes, is considered by many to be the most delicious of the breams and a particular favourite across Southern Europe and the Mediterranean. It has medium-to-firm, flaky, pinkish flesh and a uniquely delicious, clean-tasting, sweet flavour.

Gilt Head Bream Information

Gild Head Bream is the popular and highly regarded sea bream, sometimes also known as royal bream. According to Greek mythology, Gilt head bream was considered sacred to Aphrodite – the goddess of love. It is a superb looking fish with bright silvery skin and hints of pink and gold. Gild heads are successfully farmed in the Mediterranean, giving year round availability in consistent sizes, 300g to 1kg. Larger fish can be filleted, and the shape of this fish is also ideal for butterfly fillets, great for filling with pesto, dill and fennel also enhance the flavour. With its pinkish, opaque flesh, the popularity of Gild Head bream is due to its slightly sweeter tasting alternative to sea bass. It can be cooked the same way as other breams and bass. 

Catch Method
Many of our boats use handlines and rods to catch our wild Gilt Head Bream. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

Bream lends itself well to baking, grilling, shallow frying, and poaching. It’s also great on the grill. It complements fennel, sorrel, lemon, thyme, tomatoes, parsley, olives, asparagus, peas, and almonds wonderfully.

Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
