Cornish Grey Mullet
Grey or silver mullet, with its peculiar, somewhat nutty flavour derived from its coastal habitat, is a delectable and cost-effective substitute for sea bass. The flesh of a mullet is bright pink, with darker meat and a deliciously lean, firm feel. Because of its richer flavour, it pairs incredibly well with more robust flavours.

Grey Mullet Information
No relation to red mullet, grey mullet range from 450g – 3kg and have a similar appearance to sea bass but with larger scales. Fish caught out in the open sea can be great, but further inshore they can taste muddy, as bottom feeders. To remove muddiness, soak whole scaled and gutted fish for 30 minutes in 2 tbsp of vinegar and 1 tbsp salt per litre. Ideal for cooking with strong flavours, and any sea bass recipe will work well.
We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
