Cornish Red Gurnard
Gurnard is an unusual fish, having ‘wings’ and ‘legs.’ Beautiful Gurnard, which was once considered bait for crab and lobster fishing or stock for soup, is today appreciated as a tasty, sustainable catch. Gurnard is available in red, yellow, or grey variants, with substantial, meaty flesh found primarily in the tail and a deep, moderately fishy flavour.
The Cornish shore is teeming with gurnards of all types. In the winter, the fish go out into deeper water, and in the summer, they return to shallower inshore seas, eating off the coast of Penzance or along sandy coasts around underwater gullies where prey has gathered. They are typically caught in day boat nets in Cornwall.

The most common variations are red, grey and yellow / tub gurnard, but all types are very similar in shape and taste; it is just the skin colours that change. Gurnard is found around the UK and the Mediterranean, and is available in sizes from 350g – 2.5kg – always a good value fish. Although commonly used for stocks, soups and bouillabaisse, gurnard is not a big seller despite being highly rate by a number of well known chefs. Although bony, this fish has a good flavour, firm textures and takes to strong flavours well. Ideal for grilling and baking.

Gurnard pan fries or grills exceedingly well and can withstand harsher flavours. It is commonly used for stocks and soups, notably the classic French bouillabaisse. Combine it with flavours from the Mediterranean, such as garlic, herbs, pancetta, and chorizo.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
