Although it has an unusual appearance, John Dory is highly prized for its mild, somewhat sweet flavour, pearly-white meat, and firm, luscious texture. It’s a large-boned fish that’s a little more expensive due to its poor yield, but it’s worth every penny.

Locally, John Dory are caught in day boat nets or as by catch from bass fishermen.

Line caught and nets. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

This adaptable fish can be pan-fried, roasted, poached, or steamed, as well as battered and deep-fried. Because the key to preparing cod is to avoid overcooking it, it is less well suited to grilling. John Dory is also delicious in stews, pies, and casseroles, and it holds up well to stronger flavours. It pairs very well with other seafood, such as clams, mussels, and prawns.
Fish loin is finest oven-roasted with a herb crust, while for wonderful, simple cod fillets, pan-fry in oil and butter before finishing in the oven on low heat.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

The daily catch from local day boats lands fresh Cornish crab and lobster, magnificent line-caught sea bass in season, mackerel, pollack, sole and place. Wonderful Cornish native oysters, mussels and hand dived king scallops. But with over 40 local species, from Cornish Sole to Sardines, the truth is we never know what the tide will bring in.
