Cornish ‘Line Caught’ Cod

Possibly the reigning champion, king and standard for all British seafood is cod. With sizes surpassing a metre, this fish has three rounded dorsal fins and two rear fins. They possess an upper jaw that extends over the lower. The back of this fish is a greenish brown with a mottling appearance towards its sides and white belly.

Cod live just about everywhere and are caught off the Cornish coast. Cod is a key member of a whole family of fish including Haddock, Coley, Whiting, Ling and Hake. We are proud to be able to bring line caught superior cod to chefs across the hospitality sector, our locally landed fish is landed daily often sourced of Boscastle, the headlands in Padstow area, near Parranporth and Penzance.

Cod Information

A superb whitefish to which chefs are returning with renewed enthusiasm now that sustainable stocks are becoming available. The cod has a long tapered body with a mixture of sandy browns, greyish-green and dark speckles. While cod range from 500g to over 6 kg, sometimes we see even larger cod come to Wild Harbour up to a massive 10 kg. The smaller sizes of cod range from 500g to 1.8 kg, often known as codling. While fillets from smaller fish and most commonly used, it is at its best when loins or supreme are cut from larger 4 to 6 kg fish, giving a meatier portion with large, succulent flakes of pure white. As for cooking, cod is very versatile and takes most flavours, but requires care as it is easy to overcook.

Catch Method
Many of our boats use handlines and rods to catch our wild cod. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

Seasonality: All Year – Seasons run from Jun to Feb with the best quality found between Jul to Oct. Sourcing in Nov to Dec can be a difficult time to source Cod, during the winter months it is better to source alternatives such as Haddock.

Did you know? After decades of dwindling stocks due to overfishing, cod has lately regained its sustainable status with the implementation of a variety of stringent measures to allow populations to rebound.

This adaptable fish can be pan-fried, roasted, poached, or steamed, as well as battered and deep-fried. Because the key to preparing cod is to avoid overcooking it, it is less well suited to grilling. Cod is also delicious in stews, pies, and casseroles, and it holds up well to stronger flavours. It pairs very well with other seafood, such as clams, mussels, and prawns.

Fish loin is finest oven-roasted with a herb crust, while for wonderful, simple cod fillets, pan-fry in oil and butter before finishing in the oven on low heat.

Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
