The vivid red skin of the red mullet, commonly known as the “goat fish,” makes it a stunning fish to see. The majority of the year, red mullet can be found in warmer sea temperatures around Cornwall’s shorelines.
The term ‘red mullet’ actually refers to two related species of fish: there is the common red mullet with a pinkish flesh and striped red mullet with racing stripes. Both varieties are unrelated to the grey mullet. Red mullet is known for its high levels of omega-3 fatty acids, iodine, iron and phosphorus, so it’s healthy as well as delicious.

Red Mullet Information
A great looking fish, with a mix of orange, red and pink skin. Not large available from 200g to 1 kg, but big on flavour, from fish diet of crustaceans. Larger fish can be filleted, but best suited to fish between 400g to 600g. This wonderful fish just needs scaling and gills removed, and then it can be baked or grilled whole. The flesh is pretty in pink and of a delicate sweet flavour, that works well with bold flavours such as garlic and lemon. Red Mullet prefer warmer water, and can be found in shallow waters around the north coast of Cornwall.
Catch Method
Many of our boats use handlines and rods to catch our wild Red Mullet and also netting. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.
Seasonality: All Year – Bested from May – October
This adaptable fish can be pan-fried, roasted, poached, or steamed, as well as battered and deep-fried. Because the key to preparing cod is to avoid overcooking it, it is less well suited to grilling. Red Mullet is also delicious in stews, pies, and casseroles, and it holds up well to stronger flavours. It pairs very well with other seafood, such as clams, mussels, and prawns.
Fish loin is finest oven-roasted with a herb crust, while for wonderful, simple cod fillets, pan-fry in oil and butter before finishing in the oven on low heat.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
