Wild Sea Bass
Our beautiful, sustainable wild sea bass, the undisputed King of the Sea, is line-caught in season in local Cornish waters by our day boat fishermen. Wild bass, caught under stringent licence and even stricter quotas, is significantly superior to farmed bass, tasting almost like a separate fish, with a sweet, delicate flavour and deliciously firm, muscular, flaky white flesh.
The size of our entire line-caught bass ranges from 1kg to 8kg. As a main meal, a 1.5kg fish will feed four people. Our sea bass arrives scaled and gutted, and we can fillet them if you’d like.

Sea Bass Information
A superb whitefish to which chefs are returning with renewed enthusiasm now that sustainable stocks are becoming available. The cod has a long tapered body with a mixture of sandy browns, greyish-green and dark speckles. While cod range from 500g to over 6 kg, sometimes we see even larger cod come to Wild Harbour up to a massive 10 kg. The smaller sizes of code range from 500g to 1.8 kg, often known as codling. While fillets from smaller fish and most commonly used, it is at its best when loins or supreme are cut from larger 4 to 6 kg fish, giving a meatier portion with large, succulent flakes of pure white. As for cooking, code is very versatile and takes most flavours, but requires care as it is easy to overcook.
Many of our boats use handlines and rods to catch our wild Sea Bass. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

Did you know? Outside a few high-end restaurants, sea bass was a very uncommon fish thirty years ago. Growing in popularity dramatically since the 1990s, wild stocks were swiftly threatened, therefore it is now fished under very rigorous supervision.

Sea bass has a fantastic flavour that shines out on its own, but also pairs well with stronger flavours, such as Asian cuisine. Try poaching fish in stock and eating it with Mediterranean veggies if you have a fish kettle. Cook a whole bass simply, grilled, oven-baked, or on the grill, greased and wrapped in foil, with the body cavity stuffed with lemon and fresh herbs to appreciate the delicate flavour.
Fillets are best pan-fried at a high heat with the skin pan side down to ensure it crisps up, only turning over for the last minute to ensure the thickest part of the fillet is cooked through. The skin reacts very well to the heat, producing a great treat in crispy skin to compliment the delicate white meat.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
