Fresh Wild Whitebait
Whitebait is a favourite with chefs across Cornwall and beyond, it features on so many dishes such as tapas. Not actually a species in its own right but the fry of other small species like herring and sprat, found in estuaries and shallow waters around Cornwall.
There’s just one way to prepare them: whole, sprinkled in seasoned flour, deep-fried in oil, and garnished with a generous amount of lemon parsley. Cayenne pepper is frequently added to the flour and served ‘devilled.’
Whitebait is a high-protein, low-calorie, low-fat source of vitamins and minerals. They’re high in calcium and selenium, an antioxidant.

The clear waters of the Cornish coast are home to Britain’s finest seafood and shellfish. The daily catch from local day boats lands fresh Cornish crab and lobster, magnificent line-caught sea bass in season, mackerel, pollack, sole and place. Wonderful Cornish native oysters, mussels and hand dived king scallops. But with over 40 local species, from Cornish Sole to Sardines, the truth is we never know what the tide will bring in.
