Cornish Sustainable Whiting

A fish in the cod family which can be identified by the fact that adults have no barbels and the way the three dorsal fins have combined into two. It is similar to haddock, but is smaller and doesn’t have the dark mark above the breast fins. A whiting has an overbite and a pointed nose.

Our local fisherman catch Whiting, usually with mackerel feather tipped with fresh bait. Good places to catch whiting in Cornwall are Falmouth, the headlands in the Padstow area, Port Isaac, Perranporth, Penzance, Porthleven.

Whiting Information

A smaller fish from cod family, with a silvery grey body and rounded belly, and rarely found over 2 kg. This is another overlooked fish but, like Coley, Whiting fillets are really great value and rick in flavour 

Catch Method
Many of our boats use handlines and rods to catch our wild Whiting. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.

Fish Seasonality Guide

Despite its diminutive size, this is a tasty fish with similar properties to cod. The lovely, white flesh easily falls apart, making it ideal for mincing, au gratin cooking, and coating, making it easier to handle.

A whiting fillet is typically tiny and thin. You may achieve nearly the same effect by just rubbing the fish with salt an hour/half an hour before cooking.

Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
